Tequila Lime chicken Skewers
Prep time: 15 minutes (+ 4–6 hours marinating)

Smoker Temp: 300°F
Ingredients
2 lbs Boneless, skinless chicken thighs (cut into 2-inch chunks)
2 shots Silver tequila (approx. 3 oz)
3 Limes (zest of 2, juice of all 3)
1/4 cup Olive oil
1/4 cup Soy sauce
3-4 cloves Garlic, minced
2 tbsp Honey
1/4 cup Fresh cilantro, chopped
The Spice Blend: 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp paprika
Instructions
The Marinade: In a large bowl or gallon-sized bag, whisk together the tequila, lime juice, lime zest, olive oil, soy sauce, garlic, honey, cilantro, and spices.
Marinate: Toss in your 2-inch chicken thigh pieces. Ensure they are fully submerged. Refrigerate for 4 to 6 hours.
The Skewers: If using wooden skewers, soak them in water for 30 minutes. Thread the chicken pieces onto the skewers, leaving a tiny bit of space between pieces so the smoke can hit every side.
The Smoke: Preheat your smoker to 300°F. Place the skewers directly on the grates or on a wire rack over a sheet pan.
Cook to Temp: Smoke until the internal temperature of the thickest piece reaches 165°F. At 300°F, this usually takes about 30 to 45 minutes depending on your smoker's airflow.
